ALMA Vegetable Forward Stars

Mid-day dining is in, and one-Michelin-starred Alma’s refreshed executive lunch sets are a worthy contender. The new menu, which can be enjoyed as a three- (from $49) or five-course meal (from $108), features new, plant-forward dishes.

The Salt Baked Celeriac not only uses the flesh, but skins and juice as well, which are turned into a consommé, and roots into biscuits.Accompanied by a three-seaweed paste, truffle and jalapeno oil, and crème fraiche ice cream, its flavour profile is reminiscent of caviar. For mains, the new Kaboucha Pumpkin impresses.

Pumpkin and galangal puree is encased in homemade ravioli and served with pickled pumpkin, hazelnut puree and gorgonzola; a great distillation of summery sweetness that’s balanced by earthy notes. Should vegetarian food not be your fancy, opt for the Kuhlbarra Barramundi or Hungarian Goose Aged 7 Days.
