Blending imperial heritage, refined craftsmanship, and international experience, his cuisine celebrates the elegance of Hue traditions while continually elevating Vietnamese fine dining onto the global stage through culture, storytelling, and culinary artistry.

In the historic heart of Vietnam’s former imperial capital, Chef Nguyễn Đông Hải has quietly established himself as one of the country’s most distinguished culinary artisans, celebrated for preserving the soul of Hue cuisine while introducing it to an international audience through refined contemporary gastronomy. As Executive Chef of Azerai La Residence Hue, Chef Hải embodies a rare balance between cultural preservation, technical mastery, and modern hospitality leadership.

A native of Hue, Chef Hải began his culinary journey with La Residence Hotel in 2005 and has remained an integral part of the property’s transformation into the internationally acclaimed Azerai La Residence Hue. Over nearly two decades at the hotel, he has grown alongside the evolution of Vietnam’s luxury hospitality industry, working closely with renowned chefs from France, Australia, Africa, and the United Kingdom. These collaborations broadened his international culinary perspective while reinforcing his dedication to preserving the authenticity and elegance of Vietnamese cuisine.

With more than twenty four years of professional experience, Chef Hải has become particularly recognised for his sophisticated interpretation of Hue imperial cuisine, elevated through contemporary presentation and meticulous craftsmanship. His culinary philosophy centres on respecting heritage while embracing refinement and innovation, allowing traditional Vietnamese flavours to resonate with modern international diners. One of his most celebrated creations is “The Colonial Life”, a signature dining concept that seamlessly blends Nguyen Dynasty royal cuisine with refined French gastronomy in an atmosphere inspired by the romance and nostalgia of Indochine.

Chef Hải’s reputation has attracted an extraordinary roster of distinguished guests including Her Majesty Queen Margrethe II of Denmark, Their Majesties Emperor Akihito and Empress Michiko of Japan, King Norodom Sihamoni of Cambodia, former heads of state, diplomats, international celebrities, and the late Anthony Bourdain, who notably praised Chef Hải’s inventive interpretation of the Vietnamese bánh mì during his stay in Hue. 

A defining moment in his career came in 2014, when Chef Hải was invited aboard the exclusive ten day Calisto private cruise, curating bespoke breakfast, lunch, and dinner menus for a select group of international millionaires and celebrities. The experience further demonstrated his creativity, adaptability, and ability to deliver elevated culinary experiences under exceptional standards. 

In 2017, Chef Hải was entrusted with designing a Majestic Menu in honour of the state visit of Their Majesties Emperor Akihito and Empress Michiko of Japan, hosted by then Prime Minister Nguyễn Xuân Phúc. This elegant fusion of Hue imperial gastronomy and international flavours later became one of Azerai La Residence Hue’s most celebrated culinary experiences.

Beyond the kitchen, Chef Hải remains deeply committed to mentorship and culinary education. Through his long standing partnership with Hue Tourism College, he has trained and inspired hundreds of aspiring chefs while also serving as a judge and curriculum advisor for national culinary competitions. His contribution to Vietnamese gastronomy was formally recognised in 2025 when he received the prestigious title of “Master Culinary Artisan of Vietnam,” honouring his extraordinary dedication to preserving, elevating, and sharing the richness of Hue’s culinary heritage with the world.
