The story of Chef Andy Huynh begins in Đắk Lắk, Vietnam, though his culinary destiny unfolded oceans away. At the age of two, he moved to the United States, where the hum of kitchens became his true classroom. At Nobu San Diego, he began as a sushi prep cook, swiftly rising to Sushi Chef and Sous Chef - a testament to both his discipline and innate creativity. His path led him through Nobu Las Vegas, Nobu Atlantis in the Bahamas, and Nobu Newport Beach, each station adding depth and dimension to his craft until the role of Executive Chef rested naturally in his hands.
With a Culinary Arts degree from The Art Institute of California–San Diego, Chef Andy absorbed techniques and philosophies from around the world. From Japanese precision to French elegance, Italian warmth to Vietnamese soul, he gathered influences like precious ingredients, blending them into a style that is both bold and meticulous, innovative yet reverent of tradition.
In 2022, destiny carried him back to Vietnam to create Oku, the signature dining destination of Regent Phu Quoc. Here, Andy transforms a meal into an experience that unfolds like a story. The setting - intimate light, soft sound, the quiet theatre of the counter - becomes part of the narrative. Each dish is a chapter, each course a rhythm, building towards an emotional crescendo that lingers beyond the final taste.
His creativity stretches beyond the plate. With Olfactory Omakase, he pioneered Vietnam’s first dining experience marrying cuisine with scent, collaborating with a perfumer to awaken both tongue and memory. Partnerships with master chocolatiers, fashion designers, and visual artists have turned Oku into a stage where food converses with colour, texture, and form. Four-hands izakaya nights and mixology collaborations bring a playful edge, expanding the language of flavour into new realms.
