Chef Nguyen Bao Tuan

From the disciplined kitchens of luxury hospitality to the creative freedom of Ky Vat, Chef Nguyen Bao Tuan has built a career on steady evolution. His cooking reflects Central Vietnam with freshness and restraint, balancing technique and local produce in a style that feels both contemporary and deeply rooted.

Chef Nguyen Bao Tuan’s career has been built through patience rather than spectacle. Over ten years at Hyatt Regency Danang Resort & Spa, he progressed from junior kitchen positions to Chef de Partie and Sous Chef, working across hot kitchen, cold kitchen, banquet operations and multiple dining outlets. The experience gave him a rigorous understanding of consistency, service, team leadership and the demanding rhythm of luxury hospitality.

That foundation continues to define his work today. Tuan approaches the kitchen as both a creative space and a finely coordinated operation. Menu development, food safety, cost control and staff training are not separate from the dining experience, but essential to it. His cooking may begin with inspiration, yet it is sustained by discipline.

A later move into restaurant development allowed him to expand beyond the structure of a large hotel. At VietArt F&B, he developed menus for Vietnamese, seafood and brunch concepts, standardised recipes and operating procedures, trained more than 40 kitchen professionals and supported three restaurant openings. These responsibilities sharpened his instinct for creating food that is not only expressive, but also commercially and operationally relevant.

Now Head Chef at Ky Vat Restaurant in Da Nang, Tuan is developing a more personal interpretation of Vietnamese cuisine. His menus draw on local seafood, familiar flavours and seasonal ingredients, presented with greater refinement and contemporary clarity. Under his direction, the restaurant has introduced more than 50 signature dishes while strengthening its kitchen systems and team culture.

His culinary perspective is particularly compelling when tradition becomes a starting point rather than a limitation. In 2024, he received Third Prize at the “Goi Ca Xua & Nay” competition, which invited chefs to reinterpret Da Nang’s fish salad through both traditional and modern approaches. The achievement reflected his ability to preserve cultural identity while giving it a fresh visual and technical expression.

Chef Nguyen Bao Tuan belongs to a generation of Vietnamese chefs moving confidently between heritage and modernity. His rise is not defined by reinvention for its own sake, but by a measured evolution of flavour, craft and leadership.
