Growing up in Nha Trang, surrounded by coastal markets, abundant seafood and the distinctive flavours of central Vietnam, he developed an early appreciation for ingredients shaped by the sea and the seasons. Today, that connection continues to guide his work at The Westin Resort & Spa Cam Ranh.

Across a career spanning more than 14 years, Chef Lam has worked with international hospitality groups including Accor, Meliá Hotels International and Six Senses – IHG. The experience has refined his understanding of luxury dining, but his cuisine remains grounded in authenticity. Rather than transforming familiar flavours beyond recognition, he allows their character to lead.

Fresh seafood, regional produce and seasonal ingredients form the centre of his menus.
