This October 2025, guests are invited to join an exclusive dining experience inspired by the natural beauty and rich culinary traditions of Phu Quoc. Hosted by Regent Phu Quoc over two consecutive evenings, the event will bring together world-class chefs as they create a menu drawn from days of exploration and research of produce across the island.

A Once-in-a-Lifetime Culinary Journey on Phu Quoc Island
Regent Phu Quoc, Vietnam’s leading luxury beach resort, continues to surprise and delight with an extraordinary gastronomic collaboration. On October 24 and 25, 2025, its signature restaurant Oku will host a Two-Night Four Hands Dinner, bringing together Chef de Cuisine Andy Huynh and guest chef Mirko Gatti from Michelin Green Star-awarded [àbitat], Italy.
Chef Mirko, celebrated for his deep expertise in wild foraging, fermentation, and sustainable gastronomy, brings a philosophy honed through years at leading restaurants in London, Copenhagen, and Milan. Together with Chef Andy, he will craft an exclusive menu that celebrates terroir, seasonality, and the island’s natural abundance.

Accompanying him is his partner Sara, who leads the front-of-house at [àbitat]. With her signature artistry in service and beverage pairing, she will bring to this feast of flavor their beautifully nuanced service and introduce bespoke non-alcoholic accompaniments—crisp kombuchas, velvety infusions, and sparkling ferments—each one designed to echo the island’s rhythm.
A Menu To Be Revealed Just Before the Event
Leading up to these special dinners, the Chefs will have the opportunity to explore and forage on the island, from its tropical jungles to ocean tides and to meet with some of the resort's trusted producers. From fragrant jungle herbs to the briny sweetness of freshly caught seafood, and from honey still warm in its comb to the pepper’s slow-building heat, each ingredient will find expression on the plate. Chef Mirko will also be able to research and take in local culinary traditions and innovative techniques to allow him to draw inspiration from the island and the richness of the territory in the dishes he creates following.

The menus for these gourmet events will only be finalised the day prior, ensuring they are shaped by the Chef’s daily explorations and the finest seasonal ingredients. As a result, each dish will become a true reflection of the island’s bounty and the shimmering seas surrounding it.
This will be an intimate, sensory experience designed to delight a limited number of guests per night, reaffirming Regent Phu Quoc as a beacon of culinary artistry and one of Vietnam’s most distinguished dining destinations.
