Named after a wandering cartoon sailor known for curiosity, tolerance and a love of discovery, Le Corto approaches cuisine as a journey rather than a display. Since opening in 2016, it has shaped a distinctive place within Ho Chi Minh City’s fine dining scene, guided by classical French foundations and a quietly contemporary spirit.
At its helm is French Cambodian chef Sakal Phoeung, a member of the Maîtres Cuisiniers de France, with more than twenty five years in Michelin starred kitchens. His cooking reflects discipline without rigidity, refinement without distance. Sauces are built with patience, flavours layered with restraint, and each composition expresses technical clarity alongside emotional warmth.
Working closely with him, Chef de Cuisine Khoa Huynh contributes modern technique and visual precision, shaping menus that feel structured yet expressive.
