The Casian Jumbo Tiger Prawn Spaghetti is perhaps the clearest expression of the kitchen's appetite for richness. Its sauce begins not with cream, but with the prawns themselves. Tiger prawn heads are seasoned with aromatics, onion and garlic before being slowly roasted to coax out their natural sweetness. A two-hour simmer transforms them into a deeply concentrated stock, later enriched with whipping cream and Cheddar and carefully reduced into a silky sauce. The result is generous and comforting, carrying a distinctive shellfish sweetness through every strand of pasta.
For something made for the centre of the table, the Quattro Formaggi Pizza delivers familiar pleasure with considered technique. Naturally fermented dough creates an airy interior and gently crisp crust, while Parmesan, Saint Agur blue cheese, Mozzarella and Cheddar form a quartet that moves from nutty and savoury to creamy, tangy and indulgent. It is uncomplicated comfort food, but executed with enough detail to make another slice difficult to resist. Perhaps the most playful dish, however, is the restaurant's interpretation of Bánh Mì Bò Né.
A beloved Vietnamese breakfast and street-side ritual is given an international accent with Oushi beef sirloin, German sausage, Spam, pâté, eggs and cheese, all brought together with Casa Grande's house-made Bò Né sauce and served sizzling alongside crisp Vietnamese baguette. It is recognisably local, yet deliberately cosmopolitan, rather like Thao Dien itself. And perhaps that is where Casa Grande feels most at home.
