After the success of an evocative Four Hands Dinner at Hispania – a 10-course culinary journey infused with live music and sunset cocktails – Chef Marcos Morán unveils a new chapter: Sal by Hispania, where tapas meets sea breeze. “Sal by Hispania is a celebration of how we live in Spain — joyfully, casually, and always close to the sea. It’s more laid-back than the restaurant, but equally rich in flavour and soul,” shares Chef Marcos Morán, Gastronomy Director of Hispania, as the scent of grilled prawns wafts from the open kitchen.

From Long Lunches to Sunset Dinners
From leisurely lunches to refined dinners, Hispania Nha Trang now offers a full-day culinary rhythm that flows between indoor elegance and seaside ease. The main restaurant seats 42 guests indoors and 28 on its newly inaugurated outdoor terrace. Open daily from 6:00 PM to 10:00 PM, it invites guests into a world of á la carte refinement and inspired tasting menus. Meanwhile, Sal by Hispania takes on a different mood. A breezy escape facing the ocean, this distinct open-air venue opens daily from 12:00 PM to 6:00 PM. It’s the perfect place for clinking sangria glasses, lighthearted conversations, and an easy embrace of the Mediterranean lifestyle. Beginning August 1st, Sunday afternoons will welcome a live DJ set, bringing Balearic beats and golden-hour energy to Fairy Mountain Bay.

Chef Marcos’ updated dinner menu at Hispania is a heartfelt tribute to Spain’s diverse regional cuisines. Each dish draws from tradition while speaking a modern language. Highlights include Lingote de Cochinillo Segoviano, a slow-roasted suckling pig from Segovia with a golden crackling finish; Mero Asado, featuring locally caught grouper paired with a delicate pickled chicken sauce and hazelnut; and Tarta de Quesos Españoles, a velvety, baked Spanish cheesecake that lingers on the palate like a love letter from Asturias.

By contrast, the Sal by Hispania menu brings a more relaxed and communal spirit to the table. Designed for sharing and snacking, its offerings range from creamy seasonal mushroom croquettes to Andalusian-style calamari with roasted garlic emulsion, and the ever-iconic garlic prawns. For heartier appetites, the seafood fideuà and squid ink rice with prawns serve as generous, soulful reminders of Spain’s coastal kitchen.
“What inspired this menu? Nha Trang itself. Its seafood is extraordinary,” said Chef Marcos. “We’ve found real harmony between Spanish tradition and Vietnamese ingredients. We also wanted the terrace to feel like a plaza in Madrid or Oviedo — just walk in, order a few tapas, and stay as long as the sun allows.”
