An Ode To Spain
Where Spanish Heritage Meets Island Luxury

Epicure Vietnam

From Michelin-starred chefs and celebrated sommeliers to paella masters and tapas artisans, Regent Phu Quoc presents Vietnam’s first grand tribute to Spanish gastronomy, transforming the island into a stage where culture, craftsmanship and conviviality come together in a celebration of Spain unlike any other.

There are destinations that invite travellers to discover a place. Then there are destinations that bring the world to their shores. From 9 to 14 June 2026, Regent Phu Quoc presents An Ode to Spain: A Portrait of Spanish Life and Flavour, an immersive week-long celebration that promises to become one of Vietnam’s defining gastronomic events of the year. In partnership with the Spanish Pantry Festival, the resort welcomes an extraordinary constellation of Michelin-starred chefs, acclaimed artisans and wine experts, creating a tribute to Spain’s rich culinary heritage against the backdrop of Phu Quoc’s emerald waters and refined coastal glamour.

At the heart of the festivities lies one of the most remarkable culinary encounters ever staged in Vietnam. On 12 June, Oku becomes the setting for An Ode to Spain: A Six-Hands Dinner, bringing together two of Spain’s most distinguished chefs, Javier Olleros of Culler de Pau in Galicia and Benito Gómez of Bardal in Andalusia. Between them, the two chefs hold four Michelin Stars, while Olleros is also honoured with a Michelin Green Star for his commitment to sustainable gastronomy. Joining them is Andy Huynh, Chef de Cuisine of Oku, whose contemporary approach and Japanese precision provide a fascinating counterpoint to Spain’s culinary traditions.

The resulting eight-course tasting menu is conceived as a dialogue between landscapes. From the Atlantic coast of Galicia and the sun-drenched terroirs of Andalusia to Oku’s contemporary philosophy, each course celebrates the creativity and diversity that define modern Spanish cuisine.

Beyond the Michelin experience, the week shines a spotlight on the artisans who preserve and reinterpret Spain’s culinary identity. Tapas maestro Ager Urigüen, founder of Berlin’s acclaimed Txokoa, brings with him the convivial spirit that lies at the heart of Spanish dining culture, where food and conversation are inseparable. Renowned paella master David Montero unveils the artistry behind one of Spain’s most iconic dishes through theatrical live cooking inspired by the traditions of Valencia. Guiding guests through Spain’s remarkable wine heritage is Alejandro Paadín, one of Europe’s most respected sommeliers and educators, whose carefully curated tastings offer a journey through the country’s most celebrated wine regions.

The celebrations unfold across Regent Phu Quoc’s signature venues. Amor y Sabor: The Art of Tapas brings the atmosphere of Spain to Ocean Club, while La Paella: A Spanish Fiesta transforms Rice Market into a lively Mediterranean gathering complete with seafood paellas, live Ibérico ham carving, sangria and regional delicacies. Exclusive masterclasses dedicated to Jamón Ibérico, authentic paella and Spanish wines offer guests a deeper appreciation of the stories and traditions behind each experience.

Throughout the week, Regent Phu Quoc’s own culinary team, led by Executive Chef Francesco Andreoni, together with Chef Andy Huynh, Executive Sous Chef Huan Tran and Executive Pastry Chef Duyen Nguyen, lends its expertise and artistry to create experiences that marry Spanish authenticity with the refined hospitality for which Regent is renowned.

More than a celebration of food, An Ode to Spain reflects the spirit of modern luxury itself, where authenticity, cultural exchange and meaningful experiences have become the ultimate indulgence. It is also a testament to Vietnam’s growing stature on the global gastronomic stage, bringing world-class talent and extraordinary experiences to one of Asia’s most captivating islands. For one remarkable week, Spain does not simply visit Phu Quoc. It comes alive there.
