For a decade, Sushi Rei has pursued Edomae sushi with unwavering discipline. Since opening in 2015, Sushi Rei has remained resolute in its mission: to present Japanese cuisine in its most faithful form. Over ten years, the restaurant has evolved into a destination for diners who understand that true omakase is not spectacle, but restraint where value is measured in sourcing, timing, and trust.
At the helm is Tomohiro Sawaguchi, whose two decades of training span traditional ryotei in Japan and leading sushi counters across Asia. Raised between the mountains of Aichi and Nagano, his early connection to natural produce continues to inform his cooking today. Ingredients are imported directly from Japan twice weekly, often sourced through close relationships with fishermen and farmers, ensuring absolute freshness and traceability.

The omakase progresses with calm precision. Signature expressions of Edomae technique include Akami and Chutoro, carefully aged to enhance umami, and Otoro, lightly brushed with nikiri to accentuate its natural sweetness. Hikarimono such as kohada and aji are cured with exacting balance, while Uni arrives pristine, offered simply to honour its origin. Warm dishes punctuate the sequence—Chawanmushi infused with dashi clarity, and seasonal Yakimono prepared to reset the palate—before concluding with Tamago, a quiet measure of the chef’s hand.
The setting reinforces this philosophy. Designed by Japanese architect Joe Chikamori, the interior centres on Kyoto-sourced hinoki wood, creating a serene counter space where focus remains on the craft. With only eight seats and two dinner rounds each evening, Sushi Rei preserves the intimacy essential to authentic omakase, allowing chef and guest to move in attentive synchrony.
